The man running the Fourside kitchen has cooked Royal dinners at Spencer House and catered Elton John’s 50th. These days he’s more likely to be building a menu around whatever’s best at market this week, for a hundred people who’ll still be talking about the entrée a year later.
Every Fourside menu is built from scratch. There’s no set list to pick from, just a conversation about what you love, what the day looks like and what’s good right now, then a menu designed around all three. Produce comes from a tight list of local suppliers and growers chosen seasonally, which is why a March menu looks nothing like the one you’d have been served in September.
The team behind it is Justin, Katie and Ryan. Justin came up through The Savoy, The Ivy and Michelin-starred kitchens in London before helping set up Melbourne institutions including The European and Supper Club. Katie has run major events across the UK, Barcelona and LA, and still handles artist liaison at music festivals when she isn’t running Fourside’s event production. Ryan looks after front of house, with a background taking in Stokehouse and Port Phillip Estate.
Tastings run Wednesdays and Thursdays from midday at LUNA, their bayside home kitchen and event space, at $300 for two with around two weeks’ notice. They’ll send the full menu to choose from beforehand, and once you’re there they’re happy to weigh in on room layouts, run sheets and whether you really need a DJ. They cater everything from a dinner for two up to operations for ten thousand, so a wedding of any size sits comfortably within range.
